Ingredients
- 6 cups spinach
- 2 cucumbers, sliced thinly
- 2 cups cherry tomatoes, halved
- 2 tbsp shredded parmesan
- 1 avocado, halved and sliced
- 2 shredded chicken breasts, about 14oz or 400g (use rotisserie or pre-shredded chicken to save time)
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- salt
- pepper
- (optional) serve with toasted fresh bread such as focaccia
Directions
- In large bowl, combine all ingredients and mix thoroughly
- Salt and pepper to taste
- Serve with optional bread
