High Protein Egg Salad

A simple high protein egg salad recipe that can be whipped up quickly.

Ingredients

Directions

  1. Cut green onions, separating whites and greens
  2. Place eggs in pot, cover with cool water by about an inch
  3. Cover with lid and bring to rolling boil over high heat
  4. Once boiling, reduce to medium heat for 6 minutes
  5. Remove eggs from boiling water and place into large bowl of ice water for 3 minutes
  6. Remove eggs from cold water and peel
  7. Place eggs into mixing bowl, add all ingredients into bowl except for greens of the onion and mix
  8. Top with onion greens
