Ingredients
- 2 slices whole grain bread (Macros above are for Aldi’s Graintastic Bread)
- 2 eggs
- 1 cup nonfat cottage cheese
- 1/2 avocado
- Salt and pepper to taste
Directions
- Mash the avocado in a bowl. Season with salt and pepper.
- Fry the eggs to your desired doneness. I like over medium for this
- While the eggs fry, toast your bread.
- Once everything is done, spread the mashed avocado on the two pieces of bread, followed by the cottage cheese, and topped with the eggs
