Egg & Cottage Cheese Avocado Toast

  1. Mash the avocado in a bowl. Season with salt and pepper.
  2. Fry the eggs to your desired doneness. I like over medium for this
  3. While the eggs fry, toast your bread.
  4. Once everything is done, spread the mashed avocado on the two pieces of bread, followed by the cottage cheese, and topped with the eggs
