A tasty high protein sandwich that can be whipped up in 15 minutes. Use a large pan or outdoor griddle/grill to make more than one at a time!

Ingredients
- 2 slices of bread (I like Dave’s Killer Bread, but you can use any whole grain bread)
- 1 boneless, skinless chicken breast (about 200g)
- 1 slice of tomato
- 0.5 avocado, mashed
- 1 tbps dijon mustard
- 1 tsp balsamic vinegar
- 0.5 tsp extra virgin olive oil (for the sauce)
- 0.5 Tbsp extra virgin olive oil (for cooking the chicken)
- 1 tsp salt
- 1 tsp pepper
- 0.5 tsp garlic powder
Directions
- Pat your chicken breast dry, and butterfly it so that the thickness is even throughout
- Season your chicken on each side with the salt, pepper, and garlic powder
- In a pan, preheat and add the olive oil for cooking
- Cook the chicken in the pan for about 3-5 minutes each side, until cooked through
- While the chicken is cooking, add the dijon mustard, balsamic vinegar, and 0.5 tsp of olive oil to a small bow, and mix to combine
- Once the chicken is finished cooking, remove from pan, and slice across the grain to fit on the sandwich
- On one piece of bread, spread the balsamic dijon sauce, on the other, spread the mashed avocado, then layer the chicken and tomato, and top with the other slice of bread.
- Place sandwich in a pan (grill pan, if you have one) for about 2-3 minutes per side, until crispy.
