Low Effort Beef and Vegetable Soup

Hearty beef and vegetable soup that’s optimized for low effort. There’s two ways you can make this. Either in the slow cooker if you want less active cook time, or you can make it in a big pot on the stove to make this a one pot meal, especially if you need to get dinner on the table faster. Very easy to swap out other vegetables, or use fresh if you don’t want to use canned. Can use leaner ground beef, or ground chicken/turkey to give it a higher protein to calorie ratio.

Slow Cooker Directions

  1. In a pan, brown the ground beef with the spices
  2. Add all ingredients to a slow cooker
  3. Cook on high for 4 hours
  4. Salt to taste and enjoy

One Pot Directions

  1. In a large pot or dutch oven, brown the ground beef with the spices
  2. Add all ingredients in
  3. Bring to a slight boil, then reduce and simmer for 20 minutes
  4. Salt to taste and enjoy
