Meatloaf Mixture Ingredients
- 2 lbs 85% lean ground beef
- 1 yellow onion, finely chopped
- 1 tsp olive oil
- 2 eggs
- 3 garlic cloves, finely chopped
- 2 Tbsp ketchup
- 2 Tbsp dried oregano
- 3/4 cup Panko breadcrumbs
- 1/3 cup milk
- 1 tsp salt
- 1 tsp Italian seasoning
- 1 tsp ground black pepper
Sauce Ingredients
- 3/4 cup ketchup
- 1.5 tsp white vinegar
- 2 Tbsp brown sugar
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
Directions
- Preheat oven to 350
- Line a baking sheet with parchment paper
- In a large bowl, combine all meatloaf mixture ingredients and mix well
- Add the mixture to the pan, shape into a loaf about 2 inches tall
- Bake uncovered for 40 minutes
- While the meatloaf bakes, combine the sauce ingredients and a bowl and mix well
- Spread the sauce over the meatloaf and return to the oven for 20-25 minutes, until the meatloaf is cooked through.
- Remove and let rest for 10 minutes. This will make the meatloaf hold up better when you slice and serve
